Considering the best ease of use, would it be possible to return (or adding) to the old size menu ?

Settings->View->Status filesize in: Bytes Kb Auto
File list: filesize in: Bytes Kb Auto

I'm not sure if I understand what you want, option to display the size in Bytes / Kb / Auto? If so, it's already possible...

Open Settings > View > Column profiles > change or add new > click the "plus" button and select what you want:

size auto
size byte(s)
size kb
size mb
sizeondisk
...

For status bar it's possible to change it too.

Column profiles is the new custom columns (profiles)

I wanted to say this, only a click into settings and done ! faster and easier ! the column profiles is more complete but more complicated. Is possible to have the two menus in the FreeCommander XE ?

I think currently it's OK, with the new options it would cause conflicts - which option should be used then? Default option is good for most, normal users and advanced users who want to change it, should be able to do it.
